Melt butter in saucepan. Add garlic, salt, onions and black pepper and carrot. Stir and let sauté for about 5 minutes. Stir in cabbage, pepper and thyme. Stir well, cover and let simmer and additional 7 to 10 minutes.
*Stir in ½ lb. cooked, flaked salt fish and serve with fried dumplings or fried green bananas to make a traditional Caribbean breakfast.
*Substitute 2 TB oil for butter and omit salt and black pepper to make this dish Ital.
