It’s been a loooong time since I made strawberry or other any preserves recipe. Still, I can vividly recall those summer days of my childhood. Days that were spent searching through thickets of strawberry, blackberry, and grape bush in our backyard for whatever the season yielded. Guided by my mother’s Betty Crocker cookbook or her Food & Wine magazines, whatever I gathered aplenty would be simmered down to sticky sweet perfection. Living in a home that had a canning closet filled with mason jars was another bonus. By now you probably understand how a recent strawberry preserves project took me down memory.

  • 8 oz strawberries halved
  • 8 oz sugar granulated
  • 1 tsp pectin, optional
  • 1 TB fresh lemon juice juice of 1 lemon


  • Mix strawberries and sugar together. Cover and refrigerate overnight or for 8 to 12 hours.
  • After soaking berries transfer to a pot and simmer over med-low heat for 45 to 60 minutes until it becomes syrup and berries fall apart.
  • Stir in the pectin. Simmer for an additional 3 to 4 minutes.
    *If you are using cornstarch; remove the pot from the stove. Mix the cornstarch with 1 Tablespoon of water and stir it into the jam. Return the pot to the stove and simmer for an additional 3 to 4 minutes.
  • Remove from the heat. Stir in the lemon juice. Allow preserve to cool before bottling. Cover securely and refrigerate for up to 6 month. Use as desired.
