- 1 TB butter or margarine
- 1 clove garlic chopped
- 1 tsp salt
- 1 med. onion thinly sliced
- 1 tsp black pepper
- 1 med carrot cut into thin strips
- 3 C. green cabbage shredded
- 1 sm. bell pepper
- 1 sprig thyme
- Melt butter in saucepan. Add garlic, salt, onions and black pepper and carrot. Stir and let sauté for about 5 minutes. Stir in cabbage, pepper and thyme. Stir well, cover and let simmer and additional 7 to 10 minutes.
*Stir in ½ lb. cooked, flaked salt fish and serve with fried dumplings or fried green bananas to make a traditional Caribbean breakfast.
*Substitute 2 TB oil for butter and omit salt and black pepper to make this dish Ital.
