Sian’s Fruit Cake Recipe

Yet another experiment gone right. The ‘cake’ in this Fruit Cake recipe is actually a basic banana bread recipe. This fruit cake came about one recent afternoon when I decided to clean out the fridge and came across an assortment of fruits that had seen better days. Nothing about this Fruit Cake Recipe is typical. To make this cake, any collection of cooking fruits (peach, apple, pear, strawberry, etc) will do  for the topping. Let your pantry and fridge be your guide.

  • 3 lg. eggs
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 3 overripe bananas
  • 4 oz butter (1 stick)
  • 3/4 C. sugar
  • 1½ C. flour
  • 1 tsp baking powder
  • ½ C evaporated milk
  • 1 sm apple, diced
  • ½ C blueberries
  • ½ C strawberries, diced


Preheat oven to 350° Combine eggs, salt, cinnamon, nutmeg, and bananas in a mixing bowl. Mix with a hand mixer for 2 minutes until banana is crushed. Mix in butter, sugar, flour, baking powder and milk. Whisk until well blended. Pour into nonstick loaf pan. Sprinkle fruits and brown sugar over top of batter. Bake for 30 to 40 minutes, until toothpick inserted in center comes out clean. Cool on rack for 30 minutes before cutting.
