Brown Stew Fish Recipe

The origin of Brown stew fish, a tasty Jamaican dish, is unclear  but I like to imagine that some cook long ago found herself with some leftover escovitch fish and decided to “tun her hand mek fashion” (try something new)

Brown Stew Fish is a favored meal for many Jamaicans myself included.  Brown Stew Fish with Banana Dumplings come in a close second on my list of favorite cooked meals. To make this rich flavorful dish fish is fried dry and then cooked with carrots, onions, bell peppers and tomatoes and/or ketchup to make a thick rich gravy. When making this dish I prefer to use snapper or king fish but, any firm fleshed, saltwater fish works well My brown stewed fish recipe is below.

Ingredients

  • 2 lb. whole fish or fish steaks
  • (Snapper, Kingfish, Swordfish or other firm fish)
  • 2 tsp salt
  • 1tsp black pepper
  • 1 C cooking oil
  • 4 cloves garlic, peeled
  • 1 large carrot, cut into strips
  • 1 large onion sliced
  • ½ med bell pepper, cut into strips
  • ¼ C water
  • ½ C ketchup or 1 C. chopped tomatoes
  • 1 tsp allspice berries, crushed
  • 2 sprigs thyme

Instructions

Wash the fish thoroughly and pat dry with paper towels. Season the fish with salt and black pepper.Heat oil in a deep nonstick skillet or small Dutch pot over medium heat for 2 - 3 minutes. Add garlic cloves to hot oil. Place pieces of fish side by side in oil and let it fry for 10 to 12 minutes on each side.Remove the fish from the oil and set aside. When all the fish is fried; discard the oil. Using a clean saucepan, layer the veggies and fish by placing the fish between 2 layers of vegetables. Add remaining ingredients. Cover and let the fish simmer over medium heat for 15 to 20 minutes. During cooking use a large spoon to ladle gravy over the fish. Doing this will break up the ketchup and thicken the gravy. Serve with dumpling and ground provisions, rice and peas or your favorite side dishes.
